Cashew Casserole
1 stalk celery, sliced
1 large carrot, scraped and shredded
1 medium onion, chopped
1 cup sliced fresh mushrooms
vegetable cooking spray
1 cup cashews nuts, coarsely chopped
1 (8-ounce) can sliced water chestnuts, drained
1 (10¾-ounce) can cream of mushroom soup, undiluted
1 ¼ cups water
1/8 teaspoon pepper
1 (5-ounce) can chow mein noodles, divided
COOK first 4 ingredients in a large nonstick skillet coated with cooking spray, stirring constantly until vegetables are tender
ADD cashews and next 4 ingredients, stirring until blended. Stir in 1 cup chow mein noodles.
POUR into a lightly greased 2-quart casserole.
BAKE at 350º for 30 minutes.
