Montana Spaghetti Sauce

In Montana, Grandma Helen Engle makes this with wild elk meat. Since we find elk hard to obtain in Texas, we substitute ground beef.

3 lbs. ground beef

½ lb. Ground pork sausage

Brown the meats together.

Grind 2 medium carrots, 2 stalks of celery, 2 onions and 2 garlic cloves

Add vegetables to the meat and simmer for a few minutes.

1 can large tomato juice

1 can large tomato paste

1 can large tomato sauce

1 can sliced mushrooms

2-½ tsp. allspice

¼ tsp. ground cloves

¼ tsp. nutmeg

¼ tsp. (or less) cinnamon

1 tsp. sugar

2 Tbsp. heaping dried parsley

2 tsp. Italian seasoning

½ tsp. pepper

2 tsp. salt

2 bay leaves

Add all remaining ingredients to meat and vegetables and stir thoroughly.

Simmer for at least three hours.

If sauce becomes too thick, add a little water or tomato juice.

Serve over favorite pasta.
