Sweet Potato and Apple Casserole

 

  1. Cook unpeeled sweet potatoes in water to cover in a Dutch oven 25 minutes or until tender (DO NOT OVERCOOK). Drain and cool, peel and slice into ¼-inch rounds.
  2. Combine brown sugar, cinnamon and nutmeg.
  3. Layer sweet potato, apples and brown sugar mixture in a lightly greased 11x7x1-1/2 inch baking dish, beginning and ending with sweet potato. Sprinkle sweet potato with Streusel Topping.
  4. Bake at 350° for 30 minutes. Eight servings.

Streusel Topping

Combine all ingredients. Yield one cup.
