Sweet Potato and Apple Casserole
- 3 medium-size sweet potatoes
- ½ cup firmly packed brown sugar
- 1 tsp. ground cinnamon
- 1 tsp. ground nutmeg
- 2 large Winesap or other cooking apples, peeled and cut into ¼-inch tings
- Streusel Topping
- Cook
unpeeled sweet potatoes in water to cover in a Dutch oven 25 minutes or until tender (DO NOT OVERCOOK). Drain and cool, peel and slice into ¼-inch rounds.
- Combine
brown sugar, cinnamon and nutmeg.
- Layer
sweet potato, apples and brown sugar mixture in a lightly greased 11x7x1-1/2 inch baking dish, beginning and ending with sweet potato. Sprinkle sweet potato with Streusel Topping.
- Bake
at 350° for 30 minutes. Eight servings.
Streusel Topping
- ¼ cup all purpose flour
- ¼ cup firmly packed brown sugar
- ¼ cup butter or margarine
- ¼ cup chopped pecans
Combine all ingredients. Yield one cup.
