Turkey Meatloaf

Turkey meatloaf

This naturally seems like a perfect dish around Thanksgiving, but it is good all year long. Simple to make, easily feeds four (unless you want to save some for slicing onto a sandwich later in the week.)

1 to 1 1/2 pounds of ground turkey (or chicken)
1/3 cup chopped onions (a little more does not hurt)
1/3 cup chopped celery
1/4 cup chopped bell pepper (more is also OK, and add some red and yellow bell pepper as well, if desired)
1/2 cup seasoned bread crumbs
1 teaspoon sage
1/4 teaspoon thyme
1 chicken bouillon cube dissolved in 1/2 cup hot water
2 egg whites (or 4 ounces of egg beater)

Mix all ingredients

Shape into a loaf

Bake in microwave oven for 20 minutes

Serve immediately with packaged turkey gravy mix.
